Asparagus is not only deliciously crunchy, it’s extremely nutritious for our body as it provides us with potassium, vitamin C and folate which makes it especially good for pregnant women.
These days i’m all in for maintaining a healthy diet so i’m experimenting with few healthy recipes especially anything using asparagus. I’ve never tried cooking asparagus before. This happens to be my first try yet it turned out rather great.
INGREDIENTS:-
20 sticks of asparagus (1 pre-packed asparagus from Cold Storage)
a handful of bacon pieces
3 clove of garlic, finely chopped
1 shallot, finely chopped
1 teaspoon of oyster sauce
salt to taste
olive oil for stir-frying
METHOD:-
Bring a pot of water to boil and add a dash of salt.
Add asparagus in the boiling water for 1 minute (till it’s a little tender but barely cooked) then drain it and immediately place the asparagus into a bowl of ice water. Drain when it’s cooled.
Meanwhile, heat oil and saute garlic and shallots until fragrant. Add bacon bits and stir-fry for a few seconds.
Under medium heat, add asparagus and stir-fry for a few seconds. It’s essential not to over-cook the asparagus so to preserve the crunchiness.
Add oyster sauce and salt taste. Stir well and serve.
